Sorbet is an inhabitant of the town of Grancel.
She's a merchant working at a ice cream stall in the eastern block of the royal city, near the town's orbal clock. While her spot of business seems less easy to find than the one near the town gate where her competitors set up shop, Sorbet's stand is nevertheless among the most successful businesses in town (and the only place where the player can buy special ice cream, which heals more than most other ice cream recipes and also restores some CP).
The main reason for this is the fact that Sorbet's home-made ice cream is considered by many to be the best ice cream in the city and her stall is popular with tourists and nobles alike. At one point, Kloe even snuck out of the castle in disguise to get herself some of Sorbet's ice cream and her stand was even covered in Issue 1 of the Liberl News.
In order to draw even more people during the busy times of the Martial Arts Competition and Birthday Celebration, she's holding special deals during those days, even coming up with a special championship sundae after the tournament to celebrate the four champions with each flavor in the sundae representing one member of the winning team (Zin being chocolate, Estelle being strawberry, Joshua being mint and Olivier being lemon).
It seems to work quite well as there are frequently very large lines formed in front of her stall.
While Estelle and Joshua are disguising themselves as maids in order to gain entry into the heavily guarded royal keep in order to see the Queen, Estelle tries to lift the embarrassed Joshua's spirits by promising to buy him some ice cream after everything got settled down. While touring Grancel during the Birthday Celebration and approaching Sorbet's stall, Estelle remembers this promise and reminds Joshua that she'll be buying him some. She does so later that day, despite having to wait in line for a long time. When she returns from Sorbet's stand, she briefly runs into Professor Alba with whom she exchanges a few words before mentioning the ice cream is melting and hurrying back to Joshua. While Joshua acts appreciative, it's unlikely that even Sorbet's fabulous ice cream would be able to take his mind off the chilling conversation he had with Alba earlier.
